摘要：Mutants of 2,5-diketo-D-gluconic acid reductase A and B, enzymes used toproduce 2-keto-L-gulonic acid, a precursor of ascorbic acid (vitamin C), are prepared bysite-directed mutagenesis. These mutants may exhibit one or more of the followingcharacteristics: improved temperature stability, increased resistance to substrateinhibition, increased turnover of the substrate by the enzyme and increased affinity forthe substrate.
