over强调跨越,
on只是一般的表示时间
over the weekend一般用来表示整个周末都在干一件事情
on the weekend只是说周末的时候做什么事,但不一定持续整个周末

两者的区别主要是着重点不一样（强调的点）。
over the weekend 是强调一整个周末（强调做这件事时间长或是强度大）
on the weekend 是强调在周末做了这件事（强调做这件事的一个时间点）
